Description

Tholus is an elegant wine with a straw yellow color with greenish reflections. It reveals aromas of white flowers, wisteria in particular, and white fruits. On the palate it stands out for its great minerality, lively acidity and freshness that linger.

Vinification

The grapes are soft pressed. The must is left cold for a few days to start battonage in the pre-fermentation phase. The battonage then continues also in the post-fermentation phase.
