Intriguing wine with a ruby red color and purple reflections. A juicy and fluid profile that exudes aromatic herbaceous notes, cherry marasca, blackcurrant and notes of coffee and cocoa. The tannin is lively and the acidity is vibrant. The finish is pleasant reminding the cocoa notes of the nose.
The grapes are selected already at the veraison stage by cluster thinning, maintaining only the grapes with the best exposure on the plant. Once they arrive in the cellar they are partially destemmed and pressed. Fermentation begins initially at 16 degrees and then up to 22 degrees after a few days. From here, délastages are carried out every 12 hours to favor the extraction of the noblest parts of the peel such as polyphenols and aromas.
